What causes histamine intolerance?

Histamine intolerance is mainly caused due to a deficiency in the gastrointestinal enzyme diamine oxidase (DAO). When there is a deficiency of the enzyme, the food will not be properly absorbed by the gastrointestinal tract.

When a person consumes food that triggers a reaction, the primary consequence will be elevated histamine levels in the blood.
